As the weekend of Mother’s Day wrap up it is time to concentrate on the next big celebration, Father’s Day, and this is a very special one too. We not only have to come out with the most special meal ever but also figure out how to make this a memorable every year.
So for this special day I’m making my daddy’s Pineapple Bundt, he is not here, but his spirit is with us all the time and I’m sure he will love to have this bundt at any time.
Ok, one thing you must know is cake fill with crush pineapple and most of the flavor is that and is not super fancy but we add more and more love each year and the flavor is just incredible every time.

- 1cup crushed pieapple
- 1cup butter
- 3cups flour
- 1teaspoon vanilla extract
- 1 1/2cup sugar
- 4 eggs
- 1teaspoon baking soda
- 1teaspoon baking powder
- 1teaspoon cinnamon
- 1/4cup pineapple juice
- Cream butter and sugar. Add the eggs one by one and beat for 5 minutes. Add vanilla and cinnamon. Mix flour with baking soda and powder. Alternate the flour with the juice. Add by hand the crushed pineapple, make sure to mix well.
- Bake on a bundt pan of your preference, make sure is well coated with butter and flour. Once ready, let it cool for 20 minutes and remove it from the pan placing on a cooling rack.
